It all started in a tiny shop with a mixer, a table top oven, the owner and me.
It was the summer after my first year of pastry school and I got a job decorating cookies. The owner and I worked side by side, somehow managing to fill dozens upon dozens of orders in the smallest of spaces and I learned so much that summer. I learned how to get the right consistency of icing to flood a cookie and how to delicately pipe the little details on top. I learned the right way to tie a ribbon around a cookie bag so the middle of the bow lay flat in the crease instead of bunching up. I learned so many things that seemed small and insignificant at the time, never knowing how much of it would be used years later.
